Did You know that the normal time for a coffee plant to produce a mature bean
is three years?
Have you heard about "High Grown Coffee"? what is it? It means that the coffee is grown at altitudes of at least 900 meters (3,000 feet), where cooler air gives the bean a full body and delicious aroma.
What does the shade has to do with coffee growing? The shade is perfect for moderating the coffee bean's maturation by lowering temperatures and sunlight levels; the more shade the longer the proccess but the better the bean produced.
During the harvest, the experience and the eye of the coffee picker become critical because not all the coffee cherries in the plant mature at the same time, so he has to be carefull to only pick the red cherries and leave the green ones to be picked when they reach maturity.
Coffee is on the top export list for the Latin American Region; from Brazil ,Colombia and Ecuador in South America, to Honduras, El Salvador, Nicaragua, Guatemala and Costa Rica in Central America to Mexico in North America, every countrie's economy relies heavily on coffee, whether it is for export revenue or massive employment.
Besides altitude, sun and shadow, the amount of rain is also essential for the quality of the coffee bean.
When already harvested and pulped, the coffee bean has only 24 hours to be dried in the sun; if a coffee bean is wet and not spread out correctly, it will be fermented in two days and ruined.
What does "Green Bean" mean? two things: first, a green cherry that is still on the coffee plant; second, when already harvested and dried, it refers to the coffee bean that is ready to be roasted.
